As I begin to eat I take my time and really savor the food with all my senses.the Art of Therese Brown I rejoice in the smoothness of the cooked onion, the solid roundness of the carrots and all the glorious arrays of colors on my plate. I delight in the numerous scents that rise from the meal and feel the warmth or coolness each individual dish creates.

I taste all the various flavors; the gentle sweetness of the whole meal, the subtle sour and bitter or pungent and salty flavors of the side dishes and garnishes. Sometimes I can separate them, other times they blend harmoniously together. I admire the beauty of the food and how it came into being, how each was created of the heavenly and earthly forces. I savor the wholeness and holiness of the meal.

As I chew my food thoroughly fifty, a hundred or two hundred times, I notice the different changes that happen to the textures, temperature and the flavors. I taste the sweetness the whole grains create as they dissolve in my mouth. This is the most delicious taste I can imagine.

I swallow the food when it is completely liquidized. I imagine how the organs, in their own quiet ways, continue ‘tasting’ and digesting the ingested meal. Intuitively they sense the creative forces that live in the foods as a result of the processes that brought these foods into being as well as the forces living in each dish as a result of the cutting and cooking styles I chose. I envision these forces emancipated and transformed as the foods slowly are savored throughout my being. Eating is a most sacred act. A communion between heaven and earth celebrated within as we ‘break bread’ together.

Cut a pear in half and eat the first half.

the Art of Therese BrownNow savor the other half of the pear. Smell its deliciousness, feel the heaviness and the plumpness of the form. Bite it so that your teeth sink into the ripe flesh of the pear ever so slowly and feel the juice running in your mouth. Chew it thoroughly and mix the bite with your saliva. Notice the softness and possibly a little crunchiness of the pear.


Let your tongue play with it in your mouth, as you taste all the flavors. Is there a little bitterness too? What is the pear telling you? Could the pear’s deepest wish be, to really be known in its entire splendor?

 

Light Vegetable Soup with Dill

Frying vegetables before cooking them in a soup brings out their sweetness and creates a more warming dish. Use the last of your winter vegetables for this soup.

2 teaspoons dark roasted sesame oil or extra virgin olive oil
1/2 cup leeks, washed well, cut thinly on the diagonal
1/2 cup carrot cut in fine matchsticks
1 quart water or light soup stock
1-2 tablespoons barley or rice miso to taste
4 tablespoons of dill, cut very fine

Heat a soup pot, add oil and sauté the leeks for a minute. Add carrots and sauté for 2 minutes.

Add water or light stock and let simmer for 7 minutes.

Dilute and puree miso in a little soup water before adding it to the pot. Let it simmer a few minutes.

Serve the soup in individual bowls garnished with fresh dill.
