We season and garnish foods to bring out different qualities in the meal. We add specific calming or stimulating herbs, warming or cooling spice, oils and vinegars, roasted seeds and nuts, natural sweeteners or mineral rich sea salt in a subtle way so the foods are not over-powered but retain their natural, distinctive zests and essence. Seasoning is an art and must complement the foods and cooking styles in a harmonious way.
When I season dishes I try first to ‘taste’ with my eyes, ears and nose instead of with my tongue. Somehow the dishes become more complete that way. When I want to taste the food in my mouth I ladle a little on to a separate spoon and wash the spoon in between tasting the different dishes.
Some people are used to hot, spicy or salty, oily foods and might not be able to taste all the fine natural flavors of a well prepared meal at first. Avoid being tempted to drench the foods in over-powering sauces, fats, salt and sweeteners. It will not be long before the taste buds will adjust and indulge in the manifold subtle flavors of well-cooked natural whole foods.
Explore
Choose a couple of different seasonings. For example, one day eat plenty of raw garlic and on another day eat very salty foods. Observe what happens in your thinking and how you feel afterwards. Compare your observations to one another.
Spring Burdock and Nettles with Cilantro
Fresh dug burdock and young nettle tops are a wonderful combination. Both available in season at most health food stores. Young burdocks can be dug up as soon as their first leaves appear, and nettle tops gathered before they set flower. When sautéed in a little dark roasted sesame oil the strong individual flavors of burdock and nettles blend harmoniously.
2 tablespoons dark roasted sesame oil or extra virgin olive oil
2 cups burdock root grated large or shaved
2 cups nettles finely cut
1/4 cup water
1 tablespoon tamari soy sauce
3 tablespoons cilantro finely cut
Dandelion flowers for garnish
Heat a skillet, then add oil, and sauté burdock until they release a pleasant nutty aroma. Add nettles and sauté a little longer.
Pour water in the skillet, cover and simmer for 10-15 min.
Season with tamari soy sauce and simmer 2 minutes.
Add cilantro. Mix well and serve garnished with dandelion flowers.
